Something Sweet for Valentine’s Day – Red Velvet Cupcake Recipe

Cupcake Ingredients

  1. 2 ½ cup all purpose flour
  2. 1 ½  cup vegetable oil
  3. 1 ½ cup granulated white sugar
  4. 1 cup buttermilk
  5. 2egg
  6. 2 teaspoons white vinegar
  7. 2 ½ teaspoon vanilla
  8. 1 teaspoon baking soda
  9. 1 teaspoon liquid red food coloring
  10. 1 Tablespoon unsweetened cocoa powder

 

Cheesecake Frosting Ingredients

  1. 3 (8-oz.) packages cream cheese, at room temperature
  2. 1 ½ cup powdered sugar
  3. 3 ¾ teaspoons vanilla extract
  4. 2 ½ cups cold heavy whipping cream

 

Directions:

  1. Preheat oven to 350 degrees. Whisk together cake flour, cocoa, and salt then set aside your dry mixture.
  2. With an electric mixer on medium-high speed, mix together sugar and oil. 
  3. Beat eggs into the oil and sugar mixture until well combined.
  4. Mix in food color and vanilla into the wet mixture of eggs, sugar and oil.
  5. Reduce speed on the mixer to low, and add flour mixture slowly 
  6. Slowly pour in buttermilk, and set aside.
  7. Stir together the baking soda and vinegar in a small bowl. Then, add the mixture to the batter, and mix on medium speed for a few seconds.
  8. Line standard muffin tins with paper liners. Divide batter evenly among lined cups, filling each three-quarters of the way full. 
  9. Bake for about 20 minutes. 

 

For frosting, combine cream cheese, powdered sugar, and vanilla extract in a mixer until smooth. Continue to mix at low speed and slowly add cold whipping cream until a nice and airy cream forms. Use the frosting to cover the cupcake and decorate the cake with your favorite Valentine’s Day treats like a topping of Candy Hearts or chocolate.
