  1. 3 cups powdered sugar
  2. 1 cup butter
  3. 1 to 2 tablespoons whipping cream
  4. 1 teaspoon vanilla extract


  1. Using a mixer, whisk together the sugar and butter on low speed. Once the mixture is well blended, increase the speed to medium for 3 minutes.
  2. Add in the vanilla and cream as you continue mix on medium speed for an additional 1 minute. Add more cream as needed to get your desired spreading consistency.

  • 2 medium eggs
  • 3/4 cups of sugar
  • 1 cup of topped, peeled, and grated zucchini
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1/2 cup of almonds
  • 2 tsp baking powder
  • 1/4 tsp of salt
  • Strawberry jam
  • Steps:

    1. Preheat the oven to 350 F
    2. Whisk the eggs and sugar in a mixing bowl until fluffy.
    3. Mix in the zucchini and the vanilla extract into the mixture until well blended. Then, whisk in the flour and remaining ingredients.
    4. With a large spoon, drop your mixture into your cupcake pan lined with cups and add a teaspoon of jam in the middle before you fill the rest of the cup. (2/3 cake mixture first, then the jam, topped off with 1/3 cake mixture).
    5. Bake for 20 minutes until golden on top.
